Vanilla Chicken Thighs

6 Chicken thighs
1 Medium onion, halved and finely chopped
1 Tomato, peeled and seeded
1/2lb-225g Mushrooms
2 Large clove garlic, crushed
1 tablespoon Vanilla Canola Oil
1 teaspoon Pure Ground Vanilla or Vanilla Nectar
2 cup-400ml Water
 

Salt - Pepper

 
  1. Heat Vanilla Canola Oil in a large pot over medium high heat. Sauté the chicken thighs until browned, 3 to 5 minutes each side. Season with salt and pepper.
  2. Add garlic and onions. Cook until brown color. Add sliced tomato, water, mushrooms, cover and reduce heat. Simmer for 20 minutes.
  3. Remove. Taste and adjust the seasoning if needed. Add Pure Ground Vanilla or Vanilla Nectar. Cover for 5 minutes.

Accompany with rice, pasta or potatoes.

Make 6 servings.
